Are you more of a snickers person or twix bar gal? me personally, if i had to choose, i'd be a twix bar person every day. however, with my ~refined palate~ most candy bars are way too sweet for me nowadays. enter these saltine millionaire bars. they are kind of like a twix bar copycat but a little more upscale and refined with a more savory shortbread and darker chocolate ganache.
how to make millionaire bars, but with saltine bars!
Part 1: Make the saltine shortbread
- Preheat the oven to 350 degrees and line an 8” square metal pan with butter/flour and parchment paper.
- In a food processor, pulse the saltines, flour, sugar and melted butter until they look like sand and are well combined.
- Pat the mixture out into the bottom of the prepared pan and bake in the preheated oven until the shortbread is soft but slightly set, about 20 minutes. Allow cooling briefly while you prepare the caramel filling.
Part 2: Make the caramel layer
- In a medium saucepan over medium heat, cook the butter and sugar together, stirring occasionally until the butter has melted.
- Add the sweetened condensed milk and bring the mixture to a boil. Begin stirring continuously and cook for 5 minutes, until a candy thermometer reads about 220-230F and the consistency has gained thickness and turned light brown.
- Remove from the heat immediately and keep stirring for a minute while it comes off the heat.
- Pour the caramel over the saltine shortbread and let it all cool completely.
Part 3: Make the chocolate topping
- Combine chocolate and coconut milk in a 2 cup measuring cup and put in the microwave for 30 seconds.
- Stir to combine then pour over the cooled caramel.
- Sprinkle with the crushed pretzel and put in the fridge for 2-3 hours until it's all cooled.

Ingredients
Saltine shortbread
- 2 ounces 55 gm saltines
- ½ cup 65 gm all-purpose flour
- ½ cup 100 gm white sugar
- 1 stick unsalted butter melted
Caramel middle
- 6 tablespoons unsalted butter
- ½ cup sugar
- 14 oz sweetened condensed milk
Chocolate top
- 2 tablespoons full fat coconut milk or heavy whipping cream
- 3.5 ounces dark (70-80%) chocolate , chopped
- 3 saltines crushed in your hands
