I typically eat the same thing for breakfast every day (scrambled eggs with cheddar cheese) -- not having to make decisions in the morning is a nice routine for me. But occasionally I too feel stuck in a rut. I get tired of eating eggs for breakfast!! So I dug around my fridge and concocted a savory yogurt bowl. This starts with a Yogurt Moat, then adds some BLT flavors, and to completely take it over the edge, drizzles chili oil on top.
This is an easy breakfast recipe that shakes things up, and also makes use of ingredients you might already have.
I also had to restrain myself from literally licking the bowl because the combination of yogurt and chili oil is just *so* good. Yogurt with chili oil = bae.
How to make yogurt with chili oil for breakfast
- In a skillet, cook 2 slices of bacon until crispy. Chop into bits and set aside.
- In a bowl, start with a layer of plain Greek yogurt. I prefer full-fat Greek yogurt. I call this the Yogurt Moat
- Add a handful of arugula or whatever lettuce you have lying around.
- Add some chopped cherry tomatoes
- Sprinkle your bacon bits on top
- Drizzle chili oil on top
What chili oil is best?
I love Lao Gan Ma spicy chili crisp. I've ordered a jar of Fly By Jing chili oil, but they're on backorder, so I'll update the recipe when I've compared it with their chili oil. Homemade chili oil (<-- this recipe of mine has a homemade chili oil recipe) is good in a pinch, but there's something (probably MSG...) about store-bought chili oil that makes it soooo much better.
