Here's a recipe for kimchi pork dumplings - although nothing will compare to the dumplings that you can get at a wonderful Chinese restaurant or handmade by someone's grandma, it's surprisingly easy to make kimchi pork dumplings at home. This is a copycat recipe from the beloved, now closed, restaurant in Seattle, Trove.
Why these kimchi pork dumplings are so delicious
These are inspired by trove, a favorite Korean-fusion restaurant of mine in Seattle. Whenever I'm in Seattle I always sit at the noodle bar, have these dumplings + a rice cake/kale/lamb dish that I'll attempt to recreate later.
How to make kimchi pork dumplings at home
- in a food processor, mince garlic, kimchi, scallions, soy sauce, sesame oil, salt and pepper until fine. then add the pork and pulse a few times to combine.
- set aside a small bowl of water, and then follow this technique to fold the dumplings into a little purse shape, which is pretty easy for a dumpling beginner.
- set aside on a lightly floured surface, covered with a damp towel so the dumplings don't dry out as you work.
- either steam the fresh dumplings for ~5 minutes or freeze them and then steam for about ~10 minutes from frozen. top with chili oil sauce, scallions, sesame seeds.

- 1 package of dumpling wrappers
- ½ lb of ground pork
- ½ cup of kimchi
- 3 scallions
- 1 large garlic clove
- 1 teaspoon sesame oil
- 1 teaspoon soy sauce
- salt & pepper
chili oil sauce
- 1 tablespoon of chili crisp oil
- 1 teaspoon of soy sauce
- 1 teaspoon of chinese vinegar
