Here's a recipe for a salsa verde/green sauce that is the end all be all of green sauces. It's herby, piquant, fresh, a little bit briny, and not too spicy. It will also last in your fridge for a long time - like 3 weeks - before it goes bad. Make this green sauce of the gods once and enjoy it 10x over.
In the tradition of chimichurri (typically made with cilantro in my experience), this salsa verde is the perfect complement to a variety of proteins. If you're a low carb type, this salsa verde also has 0 carbs.
Things you can use this green sauce/salsa verde on:
- Steak - the classic steak/chimichurri combo
- Eggs - soo yummy on top of eggs
- Chicken -- it helps a grilled chicken breast be less depressing
- Fish - any kind of fish benefits from this zesty sauce!
- Drizzle on top of yogurt - you know I go for a savory yogurt flex
- Drizzle on top of hummus - then continue dipping away
To make this homemade green sauce/salsa verde, you will need:
- 1 bunch of parsley
- 3-4 scallions, roots and green parts discarded
- ½ cup of olive oil
- zest and juice of 1 lemon
- 2 tablespoons of capers (drained)
- Apple cider vinegar as needed
Combine all the ingredients except the apple cider vinegar in a food processor until smooth. Then taste, and if it needs a little more tang, add a tablespoon of apple cider vinegar, and pulse once or twice to finish.
