Ingredients
  

Chopped Salad

  • 1 head of iceberg lettuce chopped
  • ¼ lb Italian salami julienned
  • ½ cup provolone chopped finely or shredded
  • 16 oz chickpeas
  • 1 cup chopped tomato
  • ¼ cup julienned basil leaves

Vinaigrette

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 tablespoon dried oregano

Instructions
 

  • To make vinaigrette, combine oil, vinegar, mustard, and oregano in a jar or small container - shake to combine.
  • In a salad bowl, combine lettuce, salami, provolone, tomato, and garbanzo beans. Toss with vinaigrette and season with salt and pepper to taste.
  • Garnish with basil.
