Chopped Salad
- 1 head of iceberg lettuce chopped
- ¼ lb Italian salami julienned
- ½ cup provolone chopped finely or shredded
- 16 oz chickpeas
- 1 cup chopped tomato
- ¼ cup julienned basil leaves
Vinaigrette
- ½ cup olive oil
- ¼ cup red wine vinegar
- 1 teaspoon dijon mustard
- 1 tablespoon dried oregano
To make vinaigrette, combine oil, vinegar, mustard, and oregano in a jar or small container - shake to combine.
In a salad bowl, combine lettuce, salami, provolone, tomato, and garbanzo beans. Toss with vinaigrette and season with salt and pepper to taste.
Garnish with basil.
