Guys, I LOVE burrata. I love burrata so much I have a necklace I wear every day that says "burrata" in script on it.
The important thing to remember about this cheese is that while it's made from mozzarella, burrata is not mozzarella cheese. Burrata is its own, very special type of cheese.
Burrata has a solid outer curd made from fresh mozzarella, which is formed into a hollow pouch, then filled with a soft, stringy curd and fresh cream. It has a milky, buttery flavor that's rich without being too indulgent which helps it pair so nicely with the other ingredients in this salad.
Look for burrata in Italian markets, cheese shops, and in the cheese section of specialty grocery stores.
how to make a peach & burrata summer salad
For this salad, it's a very simple and easy-to-make recipe. The base layer is arugula, with its bitter and sharp notes, in order to balance out the sweetness of the peach.
I used peaches I got on sale at the grocery store, but I bet come August, this salad will be wonderful with peaches from the farmer's market.
I then tore the burrata into thirds and placed it on top of the salad, and drizzled some fancy olive oil and balsamic vinegar on top, alongside a few sprinkles of flaky salt. That's really it!
And you definitely don't have to use your fanciest olive oil or balsamic vinegar - any will do.
