Ingredients
  

  • 1 lb ground turkey
  • 1 yellow onion minced
  • 1 tablespoon canola oil
  • 1 lime zest and juice
  • ¼ cup soy sauce low sodium
  • 1 tablespoon fish sauce
  • 1 tablespoon ginger grated or finely chopped
  • 1 tablespoon sesame oil
  • 4 cups cooked rice
  • 4 persian cucumbers sliced
  • 4-8 tablespoon pickled red onions

Instructions
 

  • If you want rice, make rice -- follow the directions on your bag of rice to yield 4 cups of rice. If you want pickled onions on top, follow these directions to make pickled onions -- they will be quick-pickles if you're making them right now before you eat.
  • To make the ground turkey, start by heating up 1 tablespoon of canola oil in a large skillet. Add the minced onion to the oil, a pinch of salt, and saute until translucent.
  • Add in your ground turkey and saute to let the meat brown - about 5-10 minutes on high heat.
  • In a bowl off to the side, mix together ¼ cup of low sodium soy sauce, 1 tablespoon of fish sauce, 1 tablespoon of freshly grated ginger, the zest and juice of 1 lime, and 1 tablespoon of sesame oil.
  • Once the turkey is all browned and cooked through, pour the soy sauce/lime juice mixture and stir to combine.
  • Serve with hot rice, sliced cucumbers, and pickled onions.
